1. Spinach (blanched) &#8211; 1 cup<br />
2. Sweet corn (boiled) &#8211; 1 cup<br />
3. Potatoes &#8211; 2 (medium)<br />
4. Nomad food Project’s Onion and garlic jam &#8211; 2 tbsp<br />
5. Nomad food Project’s Bacon crack &#8211; 2 tbsp<br />
6. Nomad food Project’s Hot Honey &#8211; 1 tbsp<br />
7. Mayonnaise &#8211; 1/2 cup<br />
8. Mustard paste &#8211; 1/2 tbsp<br />
9. Cheese cubes ( preferably mozzarella )<br />
10. Green chillies &#8211; 1 tsp<br />
11. Mint &#8211; 1 tsp<br />
12. Pickled Jalapeños &#8211; 1/2 tbsp<br />
13. Spring onion &#8211; 1/2 tbsp<br />
14. Garlic powder &#8211; 1 tsp<br />
15. Chaat masala &#8211; 1 tsp (optional)<br />
16. Mixed herbs &#8211; 2 tsp<br />
17. All purpose flour &#8211; 1/2 cup<br />
18. Corn flour &#8211; 2 tbsp + 2 tbsp<br />
19. Breadcrumbs<br />
20. Pepper &#8211; 1 tsp<br />
21. Salt &#8211; as required<br />
22. Oil &#8211; for frying<br />
Procedure<br />
1. Combine finely chopped blanched spinach, coarsely crushed boiled corn and<br />
mashed boil potatoes. Add finely chopped green chillies and mint to this.<br />
2. Add the bacon crack, onion &amp; garlic jam, garlic powder, chaat masala, 1 tsp of<br />
the mixed herbs, and 1 tsp of pepper &amp; salt &#8211; mix this well.<br />
3. Add 2 tbsp of corn flour to bind the mixture, flatten a small portion in your palm<br />
and place a cube of cheese in the middle and then shape it into a ball. Make sure<br />
the cube is fully covered.<br />
4. Prepare a slurry by combining corn flour, all purpose flour, 1 tsp mixed herbs, 1<br />
tsp pepper and salt.<br />
5. Dip each ball in this slurry and coat well with breadcrumbs.<br />
6. Heat some oil and fry the balls until golden.<br />
7. Serve with a honey mustard mayo dip by combining mayonnaise, mustard paste ,<br />
hot honey, chopped pickled jalapeños and finely chopped spring onion.</p>
